Cooking Instructions
- Preheat your oven to 350°F (175°C).
- In a medium skillet, cook ground beef or turkey over medium heat for 5-6 minutes until browned.
- Sauté onion and jalapeno in the skillet for 5-10 minutes, then add minced garlic and spinach for another 2-3 minutes.
- In a large bowl, combine the cooked meat with sautéed vegetables, cooked quinoa, taco seasoning, and half of the shredded cheese.
- Grease an 8x8 inch baking dish and pour the mixture into it, topping with the remaining cheese.
- Bake for 20 minutes until the cheese is melted and bubbly.
Notes
Let the casserole cool slightly before serving to improve flavor integration and help the layers set.
