- Start by slicing 600g of halloumi cheese into 1 cm thick pieces to ensure even cooking.
- In a small bowl, combine 5 tablespoons of honey with the juice of 1 medium lemon and the leaves from 4 sprigs of fresh thyme. Whisk until combined.
- Layer the halloumi slices in an airtight container, pouring the honey-lemon marinade over each layer. Refrigerate for at least 1 hour.
- Heat 2-3 tablespoons of olive oil in a skillet over medium heat. Cook the marinated halloumi slices for about 2-3 minutes until golden.
- Flip the halloumi and add a bit of the reserved marinade to glaze the second side. Cook for an additional minute.
- Drizzle any remaining honey dressing over the top before serving.
