Method
 

Step‑by‑Step Instructions
  1. Coarsely chop the pitted Medjool dates into small pieces and simmer with 1/2 cup water for about 5 minutes until soft.
  2. Transfer the soft date mixture to a blender with remaining water, Greek yogurt, honey, orange blossom essence, vanilla, and sea salt. Blend until smooth.
  3. In a separate bowl, whip the heavy cream until soft peaks form, about 2-3 minutes.
  4. Gently fold the whipped cream into the date and yogurt mixture using a rubber spatula.
  5. Add the freshly grated orange zest and fold it gently into the mixture.
  6. Spoon the mousse mixture into cups, cover, and refrigerate for at least 2 hours to set.
  7. Before serving, remove the covers and optionally sprinkle with chopped pistachios for crunch.
