Preparation Steps
- Prepare the streusel by combining rolled oats, flour, brown sugar, cinnamon, and melted unsalted butter in a mixing bowl. Mix until crumbly and refrigerate for at least 20 minutes.
- Peel and slice the Granny Smith apples into thin wedges. Toss with brown sugar and cinnamon, then refrigerate for about 15 minutes.
- Make the graham cracker crust by mixing crumbs, sugar, and melted butter. Press into a 9-inch springform pan and bake at 350°F for 10 minutes.
- Beat cream cheese until smooth. Gradually add sugar, then mix in sour cream, vanilla, and eggs one at a time.
- Assemble the cheesecake by pouring the filling over the cooled crust and layering the apple mixture on top. Sprinkle streusel over the apples.
- Bake in a water bath at 325°F for 60-65 minutes until the edges are set.
- Cool in the oven for about 1 hour, then refrigerate overnight to set.
