Preparation Steps
  1. Prepare the streusel by combining rolled oats, flour, brown sugar, cinnamon, and melted unsalted butter in a mixing bowl. Mix until crumbly and refrigerate for at least 20 minutes.
  2. Peel and slice the Granny Smith apples into thin wedges. Toss with brown sugar and cinnamon, then refrigerate for about 15 minutes.
  3. Make the graham cracker crust by mixing crumbs, sugar, and melted butter. Press into a 9-inch springform pan and bake at 350°F for 10 minutes.
  4. Beat cream cheese until smooth. Gradually add sugar, then mix in sour cream, vanilla, and eggs one at a time.
