Preparation
- Pound the chicken breasts between plastic wrap to an even thickness of about ¾ inch.
- In a medium bowl, combine chipotle chili powder, ground cumin, smoked paprika, garlic powder, olive oil, and lime juice to form a wet rub.
- Coat the chicken with the chipotle wet rub and marinate in the refrigerator for at least 30 minutes.
- Preheat the grill on medium-high for about 10-15 minutes.
- Grill the marinated chicken for 6-7 minutes on each side until internal temperature reaches 160°F.
- Grill pineapple slices until caramelized, about 2-3 minutes each side.
- Mash avocado in a bowl, mix in diced mango, lime juice, sour cream, mayonnaise, garlic powder, and cumin.
- Toast burger buns lightly buttered on the insides for 2-3 minutes on the grill.
- Assemble by layering grilled chicken, Monterey Jack cheese, caramelized pineapple, and mango guacamole on the toasted bun.
Notes
For best results, marinate chicken up to 8 hours and toast buns to prevent sogginess.
