Ingredients
  

For the Chicken
  • 4 pieces Chicken Breasts Pound thin for even cooking
  • 1 tablespoon Chipotle Chili Powder For smoky heat
  • 1 cup Sweet Barbecue Sauce Use your favorite or homemade
For the Toppings
  • 4 slices Pineapple Slices Grill until caramelized
  • 4 slices Monterey Jack Cheese Can substitute with Swiss or cheddar
  • 2 pieces Avocado Ripe avocados for the guacamole
For the Guacamole
  • 1 piece Mango Ripe
  • 1 tablespoon Lime Juice Fresh preferred
  • 1 cup Sour Cream
  • 1/2 cup Mayonnaise Can substitute with Greek yogurt
Seasonings
  • 1 teaspoon Garlic Powder Optional but highly recommended
  • 1 teaspoon Ground Cumin Optional but highly recommended

Method
 

Preparation
  1. Pound the chicken breasts between plastic wrap to an even thickness of about ¾ inch.
  2. In a medium bowl, combine chipotle chili powder, ground cumin, smoked paprika, garlic powder, olive oil, and lime juice to form a wet rub.
  3. Coat the chicken with the chipotle wet rub and marinate in the refrigerator for at least 30 minutes.
  4. Preheat the grill on medium-high for about 10-15 minutes.
  5. Grill the marinated chicken for 6-7 minutes on each side until internal temperature reaches 160°F.
  6. Grill pineapple slices until caramelized, about 2-3 minutes each side.
  7. Mash avocado in a bowl, mix in diced mango, lime juice, sour cream, mayonnaise, garlic powder, and cumin.
  8. Toast burger buns lightly buttered on the insides for 2-3 minutes on the grill.
  9. Assemble by layering grilled chicken, Monterey Jack cheese, caramelized pineapple, and mango guacamole on the toasted bun.

Notes

For best results, marinate chicken up to 8 hours and toast buns to prevent sogginess.
