  • 4 large eggs
  • 1/4 cup lemon juice
  • 1 box yellow cake mix
  • 1 box lemon instant pudding mix
  • 1 tsp vanilla extract
  • 2 cups confectioners' sugar
  • 2/3 cup oil
  • 2 tbsp unsalted butter
  • 2 tbsp heavy whipping cream
  • 2/3 cup water

  • Prepare the Batter : Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan. In a large mixing bowl, combine the yellow cake mix, lemon pudding mix, eggs, oil, water, and vanilla extract. Use an electric mixer to blend the ingredients until smooth, about 2–3 minutes.
  • Bake the Cake : Pour the batter into the prepared pan and smooth the top. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Make the Glaze : In a small saucepan over low heat, melt the butter. Stir in the lemon juice, heavy whipping cream, and confectioners’ sugar until smooth. Remove from heat and let it cool slightly.
