- In a saucepan, combine raspberries and sugar over medium heat. Stir gently and bring to a simmer for about 10 minutes until thickened.
- In a mixing bowl, whip mascarpone cheese and heavy cream until smooth and fluffy, about 3-4 minutes.
- Layer dipped ladyfingers at the bottom of an 8-inch dish, cover with half of the mascarpone filling.
- Grate half of the white chocolate over the filling, add another layer of ladyfingers, and finish with remaining mascarpone filling.
- Chill covered in the refrigerator for at least 6 hours, preferably overnight.
