Preparation Steps
  1. Wash and slice the yellow squash into rounds, then boil in salted water for 8-10 minutes until tender. Drain and mash until smooth.
  2. Preheat your oven to 350°F (175°C).
  3. Remove pie crusts from the fridge and let them sit for 10 minutes. Roll one crust into a 9-inch pie dish.
  4. Cream together butter and sugar until fluffy. Add eggs one at a time and mix well. Incorporate squash, coconut, lemon juice, vanilla, flour, and nutmeg until creamy.
  5. Pour the filling into the prepared crust, cover with the second crust, trim edges, and cut slits for steam.
  6. Bake for 40-45 minutes until the crust is golden brown and the filling is set but slightly jiggly.
  7. Allow to cool for 30 minutes before slicing and serving.
