For the Noodles
  • 8 oz Pappardelle Noodles Uncooked, try gluten-free pasta if needed.
For the Sauce
  • 1 lb Spicy Italian Sausage Check for gluten-free options.
  • 2 tbsp Olive Oil Can substitute with any cooking oil.
  • 4 cloves Garlic Pressed.
  • 1 large Onion Quartered and sliced thinly.
  • 0.5 cup White Wine E.g., Chardonnay.
  • 1 can (28 oz) Diced Tomatoes With juice, fire-roasted enhance taste.
  • 1 tsp Italian Seasoning Feel free to mix oregano and thyme.
  • 1.5 tsp Salt
  • 0.5 tsp Cracked Black Pepper Adjust to taste.
For the Veggies
  • 1 each Red Bell Pepper Cored and thinly sliced.
  • 1 each Orange Bell Pepper Cored and thinly sliced.
  • 1 each Yellow Bell Pepper Cored and thinly sliced.
  • 0.25 cup Fresh Basil Leaves Julienned, divided use.
  • 2 tbsp Flat-leaf Parsley Chopped.

Method
 

Cooking Steps
  1. Cook the noodles according to the package instructions in a large pot of salted boiling water for 8-10 minutes until al dente. Drain and toss with olive oil.
  2. In a skillet, heat 2 tablespoons of olive oil. Crumble and brown spicy Italian sausage for 5-7 minutes. Remove and set aside.
  3. In the same skillet, sauté sliced onions for 5 minutes until soft. Add sliced bell peppers; cook 3-4 minutes. Stir in garlic and cook for 1 minute.
  4. Pour in the white wine, bring to a simmer, and reduce for 2-3 minutes. Add diced tomatoes, salt, black pepper, and Italian seasoning. Simmer for 5 minutes.
  5. Return sausage to the skillet, add half of the basil and parsley. Toss in the cooked noodles until well combined.
  6. Serve in bowls, garnished with remaining basil and parsley. Optionally add grated Parmesan cheese or a drizzle of olive oil.

Notes

Using fresh ingredients greatly enhances the flavors in this dish. Do not overcook the noodles for optimal texture.
