Kimchi Reuben Sandwich: A Must-Try Flavor Fusion!

A delicious fusion of traditional Reuben sandwich flavors with a spicy twist from kimchi.

Ingredients
  

  • 1 cup kimchi drained and chopped
  • 8 ounces corned beef sliced
  • 4 slices Swiss cheese
  • 4 slices rye bread
  • 4 tablespoons Russian or Thousand Island dressing
  • 2 tablespoons unsalted butter softened

Method
 

  1. Heat a skillet over medium heat.
  2. Spread 1 tablespoon of butter on one side of each slice of rye bread.
  3. On the unbuttered side of two slices, spread 2 tablespoons of dressing.
  4. Layer half of the kimchi, followed by corned beef, and top with 2 slices of Swiss cheese.
  5. Place the other two slices of bread on top, buttered side up.
  6. Carefully place the sandwiches in the skillet and cook for about 3-4 minutes until golden brown.
  7. Flip the sandwiches and cook for another 3-4 minutes until the cheese is melted and the other side is golden brown.
  8. Remove from the skillet, slice in half, and serve warm.

Notes

  • For a vegetarian version, substitute the corned beef with grilled portobello mushrooms or tempeh.
  • Add sliced pickles or jalapeños for an extra kick of flavor.
