  • 2 cups heavy cream full-fat for best texture
  • 1 cup whole milk balances richness
  • 1/2 cup sugar can substitute with honey
  • 2 1/4 teaspoons unflavored powdered gelatin for best results
  • 2 tablespoons dried lavender buds substitute with extract as needed
  • 1/4 cup honey adds natural sweetness
For the Optional Syrup
  • 1 cup water base for the syrup
  • 1/2 cup sugar sweetens the syrup
  • 2 tablespoons lemon juice adds acidity
  • 1 teaspoon rose water or orange blossom water optional for complexity

Method
 

Instructions
  1. In a medium saucepan over medium heat, combine heavy cream, whole milk, sugar, and dried lavender buds. Heat until steaming, about 5-7 minutes, without boiling.
  2. In a small bowl, sprinkle unflavored gelatin over cold water and let sit for 5 minutes to bloom.
  3. Remove cream mixture from heat, stir in bloomed gelatin and honey until dissolved.
  4. Strain the mixture through a fine-mesh sieve into a bowl to remove lavender buds.
  5. Pour mixture into 6 to 8 ramekins, cover with plastic wrap, and refrigerate for at least 4 hours or overnight.
  6. To serve, loosen edges with a knife and invert onto plates. Drizzle with honey and garnish with fresh lavender.

Notes

Ensure gelatin is bloomed properly and strain for a smooth texture. Chill overnight for best results.
