Ingredients
  

Lemon Syrup
  • 1/2 cup Lemon Juice Freshly squeezed
  • 1/2 cup Water For syrup
  • 1/4 cup Caster Sugar Superfine sugar works too
  • 1/4 cup Limoncello Optional
Cream Filling
  • 500 g Mascarpone Cheese Or cream cheese
  • 1 cup Double Cream Heavy whipping cream can be used
  • 1/2 cup Icing Sugar Powdered sugar acceptable
  • 1 tsp Vanilla Extract Pure preferred
Tiramisu Assembly
  • 1 pack Sponge Fingers (Ladyfingers) Opt for gluten-free if needed
  • 1 cup Lemon Curd High-quality store-bought or homemade
Optional Topping
  • 1 cup Whipped Cream For decoration

Method
 

Preparation Steps
  1. In a small saucepan over low heat, combine water, lemon juice, and caster sugar. Stir until the sugar dissolves, about 2 to 3 minutes. Remove from heat and cool.
  2. In a mixing bowl, whisk mascarpone, double cream, icing sugar, and vanilla extract until thickened.
  3. Dip half of the sponge fingers into the syrup for 1 second and arrange them in a layer in the serving dish.
  4. Spread half of the mascarpone filling over the sponge fingers and dollop half of the lemon curd on top.
  5. Repeat the soaking with the remaining sponge fingers and layer them atop the lemon curd, followed by the remaining cream filling and lemon curd.
  6. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  7. Optionally, whip remaining double cream with icing sugar and vanilla until soft peaks form, then decorate the tiramisu with whipped cream and lemon zest before serving.

Notes

Allow the tiramisu to chill for at least 4 hours for the best texture and flavor. Feel free to adapt ingredients to dietary needs.
