Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 pound fresh green beans trimmed
  • 4 tablespoons olive oil divided
  • 4 cloves garlic minced
  • 1 lemon juiced and zested
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine 2 tablespoons of olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, black pepper, and red pepper flakes (if using). Mix well.
  3. Add the chicken breasts to the bowl and coat them thoroughly with the marinade. Let them marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
  4. While the chicken is marinating, prepare a baking dish by greasing it with the remaining 2 tablespoons of olive oil.
  5. Place the marinated chicken breasts in the baking dish. Arrange the green beans around the chicken.
  6. Drizzle any remaining marinade over the green beans and chicken.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  8. Remove from the oven and let it rest for 5 minutes before serving. Garnish with chopped parsley.

  • For added flavor, consider marinating the chicken overnight.
  • Substitute asparagus or broccoli for the green beans for a different vegetable option.
