- Wash 4–5 cups of curly kale under cold water and pat dry. Remove tough stems and chop leaves, placing in a medium-large bowl.
- Whisk together 2 tablespoons of fresh lemon juice, 3 tablespoons of olive oil, 1 minced garlic clove, and a pinch of salt and black pepper in a separate bowl.
- Massage the dressing into the chopped kale for about 2–3 minutes until the leaves darken and soften.
- Drizzle remaining dressing over the kale, add 1/2 cup of freshly grated Parmesan cheese and toss to combine.
- Crush croutons and sprinkle over the salad just before serving for added crunch.
