Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine crushed graham crackers, melted butter, and 1/4 cup of sugar until the mixture resembles wet sand. Press into a 9-inch springform pan.
  3. Beat softened cream cheese until smooth. Gradually incorporate 1 cup of sugar and mix until fluffy.
  4. Add eggs one at a time, mixing thoroughly after each addition.
  5. Gently fold in mango puree and sour cream into the cream cheese mixture.
  6. Pour the cream cheese mixture over the crust and spread evenly.
  7. Bake for 50-60 minutes, until the center is set but slightly jiggly.
  8. Allow to cool at room temperature for an hour, then refrigerate for at least 4 hours.
  9. Before serving, top with pureed mango.
