Ingredients
  

  • 2 large zucchinis sliced into half-moons
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion sliced
  • 1/4 cup Kalamata olives pitted and halved
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1/2 cup feta cheese crumbled
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat the oven to 400°F.
  2. In a large mixing bowl, combine the sliced zucchinis, chicken pieces, cherry tomatoes, red onion, olives, garlic, oregano, basil, salt, pepper, and olive oil. Toss everything together until well coated.
  3. Transfer the mixture to a large baking dish, spreading it out evenly.
  4. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. Remove the dish from the oven and sprinkle the crumbled feta cheese over the top.
  6. Return to the oven and bake for an additional 5 minutes, until the feta is slightly melted.
  7. Let the dish cool for a few minutes before serving.
  8. Garnish with fresh parsley before serving.

Notes

  • For added flavor, marinate the chicken in lemon juice and herbs for an hour before cooking.
  • You can also substitute the chicken with shrimp for a seafood twist.
