Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the chopped spinach, feta cheese, mozzarella cheese, Parmesan cheese, garlic powder, oregano, black pepper, and salt. Mix well.
In a separate small bowl, beat the egg and then add it to the cheese mixture. Stir until fully combined.
Gradually add the almond flour to the mixture, stirring until a thick dough forms. If using, fold in the sun-dried tomatoes and olives.
Using a tablespoon, scoop out portions of the mixture and place them onto the prepared baking sheet, flattening each scoop slightly to form a crisp shape.
Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the crisps are firm to the touch.
Remove from the oven and let cool for a few minutes before transferring to a wire rack to cool completely.
