- Remove the leaves and bottom stem from the cauliflower, then slice it into four thick 'steaks'.

- Grill each side for 5-6 minutes until char marks form, then move to indirect heat for an additional 10 minutes.
- Once grilled, brush the tops of the cauliflower steaks with mayonnaise.
- Sprinkle with chili powder and crumbled cotija cheese, then top with fresh cilantro.
