  • 2 tablespoons Mild Tasting Oil like avocado, vegetable or sunflower oil
For the Topping
  • 1/2 cup Mayonnaise high-quality or homemade for best flavor
  • 1 teaspoon Chili Powder adjust according to spice preference
  • 1/2 cup Cotija Cheese or feta/ricotta salata as substitutes
  • 1/4 cup Fresh Cilantro chopped for freshness
For Serving
  • 2 wedges Lime for squeezing over the dish

Method
 

Step‑by‑Step Instructions
  1. Preheat your grill to medium heat, about 350°F (175°C), for about 10-15 minutes.
  2. Remove the leaves and bottom stem from the cauliflower, then slice it into four thick 'steaks'.
  3. Brush both sides of the cauliflower steaks with mild-tasting oil.
  4. Grill each side for 5-6 minutes until char marks form, then move to indirect heat for an additional 10 minutes.
  5. Once grilled, brush the tops of the cauliflower steaks with mayonnaise.
  6. Sprinkle with chili powder and crumbled cotija cheese, then top with fresh cilantro.
  7. Squeeze fresh lime juice over the steaks and serve immediately.
