Ingredients
  

  • 2 medium spaghetti squash about 3 pounds total
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound ground beef or turkey
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 28-ounce can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes optional
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish optional

Instructions
 

  • Preheat the oven to 400°F. Cut the spaghetti squashes in half lengthwise and scoop out the seeds. Brush the cut sides with olive oil and sprinkle with salt and pepper. Place them cut side down on a baking sheet and roast for 30-40 minutes, or until tender.
  • While the squash is roasting, heat a large skillet over medium heat. Add the ground beef or turkey, onion, and garlic. Cook until the meat is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.
  • Stir in the crushed tomatoes, oregano, basil, and red pepper flakes (if using). Simmer for 10-15 minutes, allowing the flavors to meld.
  • Once the spaghetti squash is done, remove it from the oven and let it cool slightly. Use a fork to scrape out the flesh into spaghetti-like strands.
  • In a large bowl, combine the spaghetti squash strands with the meat sauce and ricotta cheese. Mix well to combine.
  • Transfer the mixture to a greased 9x13-inch baking dish. Top with mozzarella and Parmesan cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired before serving.

Notes

  • For a vegetarian option, substitute the ground meat with lentils or mushrooms.
  • Add sautéed vegetables like bell peppers or spinach to the meat sauce for extra nutrition and flavor.
