  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup mini chocolate eggs such as Cadbury Mini Eggs

Method

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.

  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Add the vanilla extract and egg, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
  6. Gently fold in the mini chocolate eggs.
  7. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • These cookies can be stored in an airtight container at room temperature for up to one week.
  • For a fun twist, try adding 1/2 cup of chopped nuts or shredded coconut to the dough.
  • You can also substitute the mini chocolate eggs with your favorite candy pieces or chocolate chips for a different flavor.
