Method
 

Steps for Monster Meringues
  1. Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper or a silicone mat.
  2. Ensure your mixing bowl and whisk are completely grease-free.
  3. In your stand mixer, add 4 egg whites and beat on medium speed until frothy, about 2-3 minutes.
  4. Add 1/4 teaspoon of cream of tartar and continue mixing until soft peaks form.
  5. Gradually add 1 cup of granulated sugar, one tablespoon at a time, beating until stiff, glossy peaks form.
  6. Divide the meringue into three bowls and color each with gel food coloring.
  7. Pipe dollops of the meringue mixture onto the prepared baking sheet, keeping them about 1 inch apart.
  8. Bake for 2 hours, then turn off the oven and leave the meringues inside for 1 hour to cool.
  9. Once cooled, decorate with candy eyes, securing them with melted white chocolate if necessary.
  10. Store leftover meringues in an airtight container at room temperature.
