Ingredients
  

For the Sloppy Joe Filling
  • 1 tablespoon Olive Oil or any cooking oil or butter
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 pound Ground Beef can substitute with ground turkey or plant-based meat
  • 0.5 cup Ketchup or BBQ sauce
  • 2 tablespoons Tomato Paste
  • 1 tablespoon Worcestershire Sauce or soy sauce for gluten-free
  • 1 tablespoon Brown Sugar or honey
  • 1 teaspoon Smoked Paprika or regular paprika
  • to taste Salt
  • to taste Pepper
For the Mac and Cheese
  • 2 cups Cooked Macaroni can use gluten-free pasta
  • 1 cup Whole Milk or heavy cream
  • 2 cups Shredded Cheddar Cheese can experiment with different cheese blends
For the Wraps
  • 4 large Flour Tortillas or gluten-free tortillas
  • as needed Butter or Oil for grilling

Method
 

Preparation
  1. Heat a tablespoon of olive oil in a large skillet over medium heat. Sauté one chopped onion and two cloves of minced garlic for 2-3 minutes until they soften and become fragrant.
  2. Add one pound of ground beef, cooking it thoroughly for 5-7 minutes until browned. Drain any excess fat.
  3. Stir in half a cup of ketchup, two tablespoons of tomato paste, one tablespoon of Worcestershire sauce, a tablespoon of brown sugar, one teaspoon of smoked paprika, salt, and pepper. Let it simmer for 5-7 minutes until thickened.
  4. In a separate saucepan over low heat, combine 2 cups of cooked macaroni, one cup of whole milk, and two cups of shredded cheddar cheese. Stir until melted and creamy, about 5 minutes.
  5. Lay out four large flour tortillas. Spoon mac and cheese onto each, followed by Sloppy Joe filling. Roll tightly to enclose.
  6. Heat a skillet over medium and add butter or oil. Grill wraps seam-side down for 2-3 minutes until golden, then flip.
  7. Remove from the skillet, cool slightly, and slice diagonally if desired. Serve warm.

Notes

Make fillings ahead for easier assembly. Adjust seasonings to taste before wrapping.
