- Wash and hull fresh strawberries, blend until smooth, and strain if desired.
- Stir in fresh lemon juice and honey or maple syrup to the strawberry puree.
- Fold in chilled sparkling water gently to maintain fizz.

- To serve, run warm water over molds to release popsicles.
Notes
