  • 1/4 cup honey or maple syrup adjust to taste, or use agave syrup for vegan
  • 2 cups chilled sparkling water chill before mixing to retain fizz

  • 1/2 teaspoon ginger powder optional
  • 1/4 cup mint leaves finely chopped optional
  • 2 cups coconut water substitute for sparkling water if desired

Method
 

Step-by-Step Instructions
  1. Wash and hull fresh strawberries, blend until smooth, and strain if desired.
  2. Stir in fresh lemon juice and honey or maple syrup to the strawberry puree.
  3. Fold in chilled sparkling water gently to maintain fizz.
  4. Pour mixture into molds, insert sticks, and freeze for at least 6 hours.
  5. To serve, run warm water over molds to release popsicles.

Notes

These popsicles are best enjoyed fresh, but can be stored in an airtight container in the freezer for up to 2 weeks. Let sit at room temperature if hard to remove from molds.
