Caramelize the Apples
In a non-stick pan, melt the butter over medium heat.
Add the diced apples and 2 tablespoons of sugar.
Stir occasionally and cook for 5–7 minutes until the apples soften and become caramelized. Set aside.
Prepare the Batter
In a mixing bowl, whisk together the eggs, sugar, vanilla sugar, salt, yogurt, sunflower oil, and lemon zest.
Gradually add the flour and baking powder, stirring until a smooth dough forms.
Combine with Apples
Gently fold the caramelized apples into the dough, making sure they are evenly distributed.
Cook on the Stovetop
Heat a large non-stick pan over low heat and lightly grease it with butter or oil.
Pour the batter into the pan, spreading it evenly.
Cover with a lid and cook for 15–20 minutes on one side.
Carefully flip the dessert and cook for another 10 minutes until golden brown.
Glaze and Serve
Once cooked, brush the top with apricot jam for a glossy, flavorful finish.
Let it cool slightly before slicing and serving warm.
