Ingredients
  

  • 1 cup 90g oatmeal
  • 1 cup 240ml water
  • 2 eggs
  • 2 medium bananas mashed
  • 2 tablespoons honey
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Method
 

  1. Preheat the oven to 180°C (350°F) and grease a muffin tin or line it with muffin liners.
  2. In a bowl, combine oatmeal and water. Let it sit for 5 minutes to soften.
  3. Add mashed bananas, eggs, honey, baking powder, cinnamon, vanilla extract, and salt. Stir until well combined.
  4. Pour the batter evenly into the prepared muffin tin.
  5. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the muffins cool for 5 minutes, then transfer to a wire rack. Serve warm or store for later!

  • For added crunch, mix in chopped nuts or dark chocolate chips.
  • Make it dairy-free by replacing honey with maple syrup.
