- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
- Chop raw pistachios in a food processor until coarsely chopped and transfer to a mixing bowl.
- Mix diced pistachios with dried cranberries, rolled oats, chia seeds, and cinnamon.
- In another bowl, whisk together almond butter, honey or maple syrup, vanilla extract, and sea salt until smooth.
- Combine the wet mixture with the dry ingredients until well mixed, adding water if necessary for consistency.
- Press the mixture firmly into the prepared baking pan evenly.
- Bake in the preheated oven for 20-25 minutes until the edges are golden brown.
- Allow the bars to cool for 10 minutes in the pan, then lift out and slice into desired shapes.
