  • 2 cups Orzo Cooked according to package instructions
  • 1 lb Italian Sausage Remove casings if using links
  • 1 cup Bell Peppers Chopped, any color
  • 1 cup Zucchini Chopped
  • 1 cup Spinach Fresh, roughly chopped
  • 0.5 cup Onion Chopped
  • 2 cloves Garlic Minced
For the Dressing
  • 0.25 cup Olive Oil Extra virgin
  • 2 tbsp Balsamic Vinegar
  • 1 tsp Italian Seasoning
  • 1 tsp Salt
  • 0.5 tsp Pepper

Method
 

Cooking Process
  1. Cook the orzo according to package instructions. Drain and set aside.
  2. In a large pot, cook the Italian sausage over medium heat until browned.
  3. Add the onion, garlic, bell peppers, and zucchini. Sauté until vegetables are tender.
  4. Stir in the spinach and cook until wilted.
  5. In a mixing bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper.
  6. Add the cooked orzo to the sausage and vegetable mixture. Drizzle with dressing and toss to combine.
  7. Serve warm, allowing to cool for 20 minutes for flavors to meld.

Notes

This dish can be made ahead of time and served warm or at room temperature. It's perfect for potlucks or a cozy family dinner.
