  • 1 cup Peanut Butter natural and free from xylitol
  • 4 strips Bacon cooked and unsalted
  • 1 cup Oat Flour gluten-free base
  • 1 medium Banana optional, mashed
  • 2 large Eggs or substitute with flaxseed egg
  • 1/4 cup Water as needed for batter consistency

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. In a medium-sized mixing bowl, combine oat flour and baking powder, whisking until blended.
  3. In another bowl, mash a ripe banana if using, then stir in the peanut butter, add eggs, and mix in water until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just blended.
  5. Chop the cooked bacon into small pieces and fold them gently into the batter.
  6. Spoon the batter into your prepared pan and bake for 20 to 25 minutes or until golden brown.
  7. Let the cake cool in the pan for 10 to 15 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure peanut butter is free from xylitol and added sugars. Store at room temperature for up to 3 days or in the fridge for up to 5 days. Freeze for longer storage.
