  • 1 cup Peanut Butter natural or creamy
  • 1 cup White Sugar or substitute with brown sugar
  • 1/2 cup Brown Sugar for added moisture
  • 2 large Eggs room temperature
  • 1 teaspoon Vanilla Extract pure for best taste
  • 2 cups All-Purpose Flour
  • 1 cup Rolled Oats quick oats can be used
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt omit if necessary
  • 2 medium Bananas ripe and mashed
  • 1 cup Chocolate Chips or substitute with nuts

Method
 

Baking Steps
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
  2. Cream together butter, peanut butter, white sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each, then add vanilla extract and mix until blended.
  4. In a separate bowl, whisk together flour, oats, baking soda, and salt.
  5. Gradually add dry ingredients to wet mixture and mix on low speed until just combined.
  6. Fold in the mashed bananas and chocolate chips gently with a spatula.
  7. Scoop dough onto the prepared baking sheet, leaving space between each scoop.
  8. Bake for approximately 12 minutes until edges are lightly browned.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

These cookies stay fresh in an airtight container for up to a week and can be frozen for 3 months.
