Preheat your oven to 350°F (175°C). Arrange the baguette slices on a baking sheet and brush both sides lightly with olive oil.
Toast the baguette slices in the oven for about 10 minutes, flipping halfway through, until they are golden and crisp.
While the bread is toasting, heat a small skillet over medium heat. Add the chopped walnuts and toast them for about 3-4 minutes, stirring frequently, until they are fragrant and lightly browned. Remove from heat and set aside.
Once the bread is toasted, remove it from the oven and let it cool slightly.
On each slice of toasted baguette, layer a few slices of pear, followed by crumbled Gorgonzola cheese.
Drizzle honey over the top of each toast, then sprinkle with toasted walnuts, fresh thyme leaves (if using), and a pinch of salt and pepper.
Serve immediately as an appetizer or snack.
