- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium-sized mixing bowl, combine granulated sugar, light corn syrup, melted unsalted butter, pure vanilla extract, and the large egg, whisk until smooth.
- Gently fold the chopped pecans into the filling mixture until evenly coated.
- Unroll the Pillsbury Crescent Rolls, place 2 to 3 tablespoons of the pecan filling at the wide end of each triangle, and roll it towards the narrow end.
- Arrange the assembled rolls on the baking sheet and bake for 8 minutes.
- Brush the tops with the reserved filling mixture and return to the oven for an additional 5 minutes.
- Allow to cool slightly before serving, optionally topping with additional chopped pecans.
