For the Steak
- 1 pound 454g boneless rib eye steak, skirt steak, or pre-sliced rib eye
- 1 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
- 1 tablespoon 15ml vegetable oil
For the Onions
- 1/2 medium yellow onion 4 ounces; 114g, diced into 1/4-inch pieces
For the Cheese
- 8 thin slices provolone cheese 6 ounces; 160g
- 2 tablespoons grated Parmigiano-Reggiano cheese optional
For the Rolls
- 2 Italian hoagie/sub rolls 7-8 inches long, split lengthwise but left attached
Prepare the Steak: Slice the steak very thin (partially freezing it for 15-20 minutes helps) and season with salt and pepper.
Cook the Onions: Sauté the diced onions in 1 tablespoon of vegetable oil over medium heat until caramelized, about 5-7 minutes. Remove and set aside.
Cook the Steak: In the same skillet, cook the steak over medium-high heat for 2-3 minutes, stirring occasionally until browned but tender.
Add the Cheese: Lower the heat, spread the steak in the skillet, and top with 4 torn slices of provolone cheese. Let it melt, then stir to combine.
