Ingredients
  

  • 1 cup fresh pineapple chunks1-inch piece fresh ginger peeled and grated2 tablespoons honey or agave syrup½ cup waterIce2 cups ginger beer (regular or sugar-free)Fresh mint leaves, for garnishPineapple wedges, for garnish

Instructions
 

  • In a blender, combine pineapple chunks, grated ginger, honey or agave, and water. Blend until smooth.
  • Strain the blended mixture through a fine-mesh sieve into a pitcher to remove pulp and ginger bits.
  • Fill two glasses with ice. Pour the pineapple-ginger mixture into each glass, filling about one-third of the way.
  • Top each glass with ginger beer.
  • Stir gently to combine. Garnish with fresh mint leaves and pineapple wedges.
  • Serve immediately and enjoy cold.

Notes

For a vegan version, use agave syrup instead of honey.
Use sugar-free ginger beer if you prefer a lighter option.
