- In a blender, combine pineapple chunks, grated ginger, honey or agave, and water. Blend until smooth.
- Strain the blended mixture through a fine-mesh sieve into a pitcher to remove pulp and ginger bits.
- Fill two glasses with ice. Pour the pineapple-ginger mixture into each glass, filling about one-third of the way.
- Top each glass with ginger beer.
- Stir gently to combine. Garnish with fresh mint leaves and pineapple wedges.
- Serve immediately and enjoy cold.

For a vegan version, use agave syrup instead of honey.
