Method
 

Making the Lemonade
  1. Peel, pit, and chop 6 to 8 ripe peaches. Place in a medium saucepan with ½ cup of sugar, ½ cup of water, and 1 tbsp of lemon juice. Cook over medium heat for 10 to 15 minutes, stirring occasionally.
  2. Transfer the soft peach mixture to a blender. Blend on high for about 30 seconds until smooth. Strain if desired for a silkier texture.
  3. In a separate saucepan, combine 1 cup of sugar with 1 cup of water. Heat over medium, stirring until the sugar dissolves completely, about 5 minutes.
  4. In a large pitcher, combine the cooled peach puree, 1½ cups of lemon juice, and the simple syrup. Stir until well mixed.
  5. Add 4 to 6 cups of cold water based on your taste preference. Stir well to combine.
  6. Serve over ice, garnished with peach slices, lemon wheels, and mint sprigs.

Notes

Choose ripe peaches for maximum sweetness. Always use fresh lemon juice for best taste. Chill the lemonade before serving for improved flavor.
