Mochi Mixture
  • 1 cup Glutinous Rice Flour Can substitute with mochiko flour.
  • 1 cup Fresh Watermelon Juice Use ripe and at room temperature.
  • 2-3 tablespoons Granulated Sugar Adjust based on sweetness of watermelon.
Dusting
  • 2 tablespoons Cornstarch For dusting to prevent stickiness.

Method
 

Preparation
  1. Cut a ripe watermelon into chunks, blend until smooth, and strain to collect about 1 cup of juice.
  2. In a bowl, combine 1 cup of glutinous rice flour and sugar, then add watermelon juice while whisking until smooth.
  3. Microwave the mixture in intervals of 1 minute, stirring each time until glossy and translucent.
  4. Dust a plate with cornstarch, transfer the mixture, and let it cool slightly before shaping.
  5. Dust each shaped piece with cornstarch to prevent sticking.

Notes

Enjoy fresh, but can be stored in an airtight container for up to 2 days or frozen for longer storage.
