Ingredients
  

  • 2 pounds carrots peeled and cut into sticks
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 tablespoon honey
  • 1 teaspoon red pepper flakes adjust to taste
  • 1 tablespoon lemon juice
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 425°F. Line a baking sheet with parchment paper.
  2. In a large bowl, toss the carrot sticks with olive oil, salt, and black pepper until evenly coated. Spread the carrots in a single layer on the prepared baking sheet.
  3. Roast the carrots in the preheated oven for 25-30 minutes, or until they are tender and caramelized, tossing halfway through for even cooking.
  4. While the carrots are roasting, prepare the whipped ricotta. In a medium bowl, combine the ricotta cheese, honey, red pepper flakes, and lemon juice. Use a hand mixer or a whisk to blend until smooth and creamy.
  5. Once the carrots are done, remove them from the oven and let them cool slightly.
  6. To serve, spread the whipped ricotta on a serving platter and top with the roasted carrots. Drizzle with additional honey if desired and garnish with chopped parsley.

Notes

  • For a sweeter touch, add a sprinkle of cinnamon to the carrots before roasting.
  • For a dairy-free option, substitute the ricotta with a vegan cream cheese alternative.
