  • 1 tbsp Dijon Mustard
  • 1 tbsp Grainy Mustard

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the potatoes into wedges and toss with olive oil, salt, and pepper.
  3. Spread potato wedges in a single layer on a baking sheet and roast for about 35 minutes, flipping halfway through.
  4. In a bowl, combine goat cheese, olive oil, lemon juice, garlic, Dijon mustard, and grainy mustard, and whisk until smooth.
