Ingredients

For the Batter
  • 1 cup Unsalted Butter Adds richness and moisture; you can use salted butter but skip the extra salt.
  • 1/2 cup Honey Provides natural sweetness and moisture; warm slightly for easier mixing.
  • 1/2 cup Brown Sugar Contributes to the cookie’s moist texture with a lovely depth of flavor.
  • 1/2 cup Granulated Sugar Enhances sweetness and helps with browning caramelization.
  • 1 large Egg Binds ingredients and helps provide a soft texture.
  • 2 cups All-Purpose Flour Forms the cookie’s structure for that perfect chewy base.
  • 1 teaspoon Baking Soda Aids in leavening for puffiness; ensure it’s fresh for the best results.
  • 1 teaspoon Cinnamon Offers a warm, spicy flavor; feel free to adjust based on your taste preference.
  • 1 teaspoon Flaky Sea Salt Elevates sweetness and adds a delicious contrast to the flavors.

Equipment

  • mixing bowls
  • Baking sheets
  • parchment paper
  • stand mixer or hand mixer

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the unsalted butter, honey, brown sugar, and granulated sugar. Beat until light and fluffy, about 2-3 minutes.
  3. Add one egg to the mixture and mix on low speed until fully incorporated and the batter is smooth.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and ground cinnamon until well combined.
  5. Gradually add the dry ingredients to the wet batter, stirring gently until just combined.
  6. If the dough is too soft and sticky, chill it in the refrigerator for about 30 minutes.
  7. Once chilled, portion out the dough onto a baking sheet, spacing the balls at least 2 inches apart.
  8. Bake for approximately 12 minutes, or until the edges are lightly golden and the centers remain soft.
  9. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough before baking if it feels too soft. Store in an airtight container for optimal freshness.
