Step-by-Step Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the unsalted butter, honey, brown sugar, and granulated sugar. Beat until light and fluffy, about 2-3 minutes.
- Add one egg to the mixture and mix on low speed until fully incorporated and the batter is smooth.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and ground cinnamon until well combined.
- Gradually add the dry ingredients to the wet batter, stirring gently until just combined.
- If the dough is too soft and sticky, chill it in the refrigerator for about 30 minutes.
- Once chilled, portion out the dough onto a baking sheet, spacing the balls at least 2 inches apart.
- Bake for approximately 12 minutes, or until the edges are lightly golden and the centers remain soft.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
Chill the dough before baking if it feels too soft. Store in an airtight container for optimal freshness.
