  • 1/2 cup Parmesan Cheese Freshly grated is best.
  • 1/4 cup Fresh Parsley For garnish; basil can be used.

Equipment

  • Large pot

Method

Step-by-Step Instructions
  1. In a large pot over medium heat, drizzle in a tablespoon of olive oil. Once shimmering, add the diced onion and sauté until translucent and softened, about 3–4 minutes.
  2. Add the spicy sausage, breaking it apart and cooking until no longer pink, about 5–7 minutes.
  3. Stir in diced and crushed tomatoes with juices, garlic powder, salt, pepper, and Italian seasoning. Add cream cheese and chicken broth, mixing until smooth.
  4. Seal the pot with its lid, set the vent to sealing, and cook on high for 5 minutes. Perform a quick release of the steam.
  5. Remove the lid and stir in heavy cream and parmesan cheese until smooth.
  6. Ladle into bowls, sprinkle with fresh parsley, and serve hot.
