- Step 1: Marinate the Duck - Thinly slice the duck breast and marinate for 20 minutes.
- Step 2: Prepare Sauce - Combine soy sauce, rice vinegar, chicken stock, sugar, corn starch, and Shaoxing wine in a bowl and whisk.
- Step 3: Stir-Fry Scallions - Heat peanut oil, stir-fry scallions for 30 seconds, then set aside.
- Step 4: Cook Aromatics & Duck - Sauté garlic and ginger, add marinated duck, and cook until no pink remains.
- Step 5: Add Sauce - Pour sauce over the duck, stir for 1-2 minutes.
- Step 6: Combine - Add scallions back, toss with the duck, and drizzle sesame oil.
- Step 7: Serve Hot - Plate over rice and enjoy!
