Marination & Pickling
- Slice the pork tenderloin lengthwise and pound thin. In a bowl, mix lemongrass, garlic, ginger, fish sauce, oyster sauce, lime juice, maple syrup, and spices. Marinate pork for 6-8 hours.
- Pickle vegetables by boiling water and mixing with rice vinegar, sugar, and salt. Pour over carrots and daikon radish, let sit for at least 30 minutes.
Cooking & Assembling
- Heat a grill/pan. Grill marinated pork for 1-2 minutes per side until caramelized. Use a meat thermometer to check for 145°F.
- Toast Vietnamese baguettes cut-side down on the grill until browned.
- Spread mayonnaise and chili garlic sauce inside each baguette. Layer with pork, pickled veggies, cucumber, jalapeños (if using), and cilantro.
Notes
For best results, marinate pork and pickle vegetables a day in advance. Keep components separate during storage.
