  • 1 tablespoon Honey Brown sugar is a substitute
  • 2 slices Sandwich Bread Sourdough or ciabatta recommended
For the Egg Mixture
  • 2 tablespoons Mayonnaise (in a tube) Regular mayonnaise is an alternative
  • 2 large Eggs Room temperature for best texture
  • to taste Salt

For the Topping
  • 4 tablespoons Pancetta or Bacon Bits Prosciutto can replace for a leaner option
  • 2 tablespoons Shredded Parmigiano Cheese Substitute with Pecorino Romano for a sharper taste

Method
 

Preparation Steps
  1. In a medium bowl, blend unsalted butter and honey until smooth. Aim for a creamy consistency.
  2. Preheat your oven to 375°F (190°C). Arrange bread on a cooling rack and spread honey butter evenly on each slice.
  3. Use mayonnaise to outline edges of the bread to prevent eggs from spilling.
  4. Crack one egg onto each slice, season with salt and pepper.
  5. Sprinkle pancetta or bacon bits over the eggs evenly.
  6. Sprinkle shredded Parmigiano cheese over the bread and toppings.
  7. Broil the toast for 4-5 minutes until cheese is melted and bread is golden brown.
  8. Remove from broiler and serve immediately, optionally with fresh salad or fruit.

Notes

Carbonara Toast is best enjoyed fresh, but leftovers can be stored in an airtight container for up to 3 days. Reheat in the oven to regain crispness.
