Ingredients
  

For the Filling
  • 1 pound Ground Beef Can substitute with ground chicken or turkey.
  • 2 cups Diced Potatoes Fresh or canned work beautifully.
  • 1 cup Diced Carrots Can swap with corn or peas.
  • 1 cup Diced Celery Optional for those with allergies.
  • 1 medium Onion Yellow or sweet varieties are milder.
  • 1 cup Peas Can be omitted or substituted with corn.
  • 1 tablespoon Fresh Thyme Dried thyme can be a substitute.
For the Pastry
  • 1 package Puff Pastry Chilled for best results.
  • 1 beaten Egg Use milk as a dairy-free alternative.

Method
 

Step 1: Prepare the Filling
  1. In a large skillet, heat a tablespoon of oil over medium heat and brown the ground beef until no longer pink, about 5-7 minutes. Drain excess fat, add onions, carrots, and celery, and sauté until soft, about 5 minutes.
  2. Stir in diced potatoes, peas, thyme, and season with salt and pepper. Cover and let simmer until thickened, about 10 minutes.
Step 2: Assemble Hand Pies
  1. Preheat oven to 400°F (200°C). Roll out the chilled puff pastry on a floured surface until 1/8 inch thick. Cut into 4-inch squares, and place on a parchment-lined baking sheet.
  2. Spoon a generous amount of filling onto one half of each square, fold the other half over to create a pocket. Press edges to seal and crimp with a fork for decoration.
Step 3: Bake the Pies
  1. Place assembled hand pies back on the baking sheet. Whisk together egg and water, brush tops for a golden finish, and cut slits for steam release.
  2. Bake for 24-26 minutes, until pastry is golden and flaky.
Step 4: Cool and Serve
  1. Remove from oven and cool on a wire rack for 5-10 minutes. Serve warm, possibly with dipping sauce or salad.

Notes

These savory hand pies can be customized with various fillings and are perfect for meal prep; they freeze well and can be baked from frozen.
