- Season chicken thighs with kosher salt on both sides. In a large skillet, heat oil and sear chicken until golden brown and cooked through.
- In the same skillet, sauté chopped onion for 5 minutes until translucent. Add minced garlic and sauté for 1 additional minute.
- Sprinkle smoked paprika over the onions and garlic, stirring for 30 seconds. Pour in chicken broth and let simmer.
- Return chicken to the skillet, cover, and let simmer on low heat for 20-25 minutes.
- Remove chicken, stir in sour cream into the sauce. Adjust seasoning and allow to simmer for another 5 minutes.
