- Rinse 1 cup of sushi rice under cold water until clear, then combine with 1.25 cups of water in a pot. Boil, then simmer for 20 minutes until tender.
- Whisk together 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 0.5 teaspoon of salt until dissolved. Fold into cooked rice and cool.
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Wet hands and shape cooled sushi rice into golf ball-sized portions and place on the baking sheet.
- Add a slice of cooked salmon and a slice of avocado on each rice portion. Optionally include sesame seeds or scallions.
- Bake for 10-15 minutes until golden and crispy on the edges.
- Cool slightly after baking. Serve warm or at room temperature, optionally with soy sauce or pickled ginger.
