- Start by laying one sheet of defrosted puff pastry on a lightly floured surface. Use a rolling pin to gently roll the pastry to about 1/8-inch thickness.
- Spread 1 tablespoon of cream-style horseradish evenly across the rolled-out pastry. Sprinkle 1 cup of shredded Gruyère cheese over the horseradish, followed by 1/3 cup of caramelized onions, half of the crumbled bacon, and 1/2 teaspoon of fresh thyme.
- Use plastic wrap to compress the layers gently, then roll the pastry from both long sides toward the center.
- Wrap the rolled pastry log in plastic wrap and refrigerate for at least 1 hour or freeze for about 30 minutes.
- Once chilled, unwrap the dough and cut the log into 1/4-inch thick slices. Lay the slices flat on a parchment-lined baking tray.
- Preheat your oven to 400°F (200°C) and arrange the sliced palmiers on the baking sheet. Bake for 12-15 minutes until golden brown.
- Allow the Savory Palmiers to cool slightly before transferring to a serving platter. Serve warm.
