Step-by-Step Instructions for Vietnamese Lemongrass Chicken
- Preheat your oven to 400°F (200°C).
- Trim the tough ends off the lemongrass and finely chop the tender white parts. Mince the garlic and shallot.
- In a mixing bowl, combine the chopped lemongrass, minced garlic, and shallot with fish sauce, soy sauce, honey, sesame oil, black pepper, and red pepper flakes.
- Cut the chicken thighs into bite-sized pieces and marinate in the mixture for at least 30 minutes.
- Heat vegetable oil in a skillet over medium-high heat. Sear marinated chicken pieces in batches for 2-3 minutes on each side.
- Transfer seared chicken to a baking dish and bake for 20-25 minutes.
- Let it rest for a few minutes, then serve hot with jasmine rice.
