Step-by-Step Instructions for Vietnamese Lemongrass Chicken
  1. Preheat your oven to 400°F (200°C).
  2. Trim the tough ends off the lemongrass and finely chop the tender white parts. Mince the garlic and shallot.
  3. In a mixing bowl, combine the chopped lemongrass, minced garlic, and shallot with fish sauce, soy sauce, honey, sesame oil, black pepper, and red pepper flakes.
  4. Cut the chicken thighs into bite-sized pieces and marinate in the mixture for at least 30 minutes.
  5. Heat vegetable oil in a skillet over medium-high heat. Sear marinated chicken pieces in batches for 2-3 minutes on each side.
  6. Transfer seared chicken to a baking dish and bake for 20-25 minutes.
  7. Let it rest for a few minutes, then serve hot with jasmine rice.
