Ingredients

  • 2 cups fresh okra sliced into 1/2-inch pieces
  • 1 medium onion diced
  • 1 cup diced tomatoes canned or fresh
  • 2 cloves garlic minced
  • 1/4 cup vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper optional for heat
  • 1 tablespoon apple cider vinegar
  • 1/4 cup water
  • Fresh parsley chopped (for garnish)

Method

  1. In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the sliced okra to the skillet and cook for about 5 minutes, stirring occasionally, until it begins to soften.
  4. Mix in the diced tomatoes, salt, black pepper, paprika, cayenne pepper (if using), apple cider vinegar, and water.
  5. Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet and let it cook for 15-20 minutes, stirring occasionally, until the okra is tender.
  6. Taste and adjust seasoning if necessary. Remove from heat and garnish with chopped parsley before serving.

Notes

  • For added flavor, consider incorporating cooked sausage or bacon into the dish.
  • If you prefer a thicker consistency, let the dish simmer uncovered for the last 5 minutes of cooking.
