- Preheat your oven to 325°F (163°C), preparing to bake.
- Sift together 4.25 cups of all-purpose flour, ¾ cup of corn starch, 2 teaspoons of baking powder, and ½ teaspoon of lemon zest.
- In a large bowl, cream together 1 cup of softened unsalted butter, ½ cup of shortening, and 1.5 cups of granulated sugar.
- Mix in 1 egg, 1.5 teaspoons of vanilla extract, and 2 teaspoons of almond essence.
- Gradually add the sifted dry ingredients to the wet mixture, mixing until just combined.
- Roll out the cookie dough to about ¼ inch thick and cut shapes using a bunny-shaped cookie cutter.
- Bake for 9-10 minutes until the edges are set.
- Prepare the frosting by beating 1 cup of softened butter, then gradually adding 6 cups of powdered sugar and mixing until smooth.
