Method
 

Step-by-Step Instructions
  1. In a small saucepan, warm 1 cup of whole or non-dairy milk over medium-low heat and add 2 tablespoons of lavender buds. Let steep for 5-7 minutes, then strain and set aside.
  2. In a microwave-safe bowl, mix 1 cup of sweet rice flour with 2-4 tablespoons of sugar until free of lumps.
  3. Pour lavender-infused milk, ¼ cup honey, and 1 teaspoon vanilla into dry ingredients. Whisk until smooth.
  4. Cover bowl and microwave on high for 2 minutes, stir, then microwave for another 1 minute and 30 seconds until translucent.
  5. Dust work surface with potato starch and transfer warm mixture, flatten to 1-inch thickness. Cut into shapes.
  6. Dust cut mochi lightly with more potato starch and serve immediately or cool before storing.

Notes

Best enjoyed fresh, can be served with green tea or dressed with powdered sugar for presentation.
